Could some please explain the colour coding for weapon stats, e.g. green, orange etc.?

Green its okay, orange is suspicious, red is pretty much impossible for certain statistics.

Green a little bit higher than the average

    Yellow  higher than the average

Red  much higher than the average

    example this guy

if you put your mouse over the HSKR and DMG

you are going to see how much someone is over the average.

if someone is only playing the hardcore mode, the dmg is going to be higher

ex :  the MG4 is probably going to around 35 dmg

if the guy play only nornal mode the dmg is going to be around 16 DMG

    you can check : http://symthic.com/bf4-stats

the stats of a gun on symthic

Sometimes Red can mean too little data (guns nobody uses), but it's higher than what we have info on.

I note that the stats only cover infantry weapons and gadgets though.  Shouldn't vehicles be covered too?

Yes, vehicles should be covered.  Too bad DICE didn't think so.  They chose to leave out almost all such stats for vehicles.  The data simply isn't available.  When you contact the DICE developers to tell them they suck, tell 'em I sent ya.
